  • 2 pounds Wild Alaskan Cod
  • 2 tablespoons olive oil
  • 8 cloves garlic, minced
  • 5 roma tomatoes, chopped
  • 2 tablespoons dried oregano
  • 3 cups fresh spinach
  • 1 lemon, juiced
Here's how to make this dish:
  1. Heat the olive oil in a skillet over medium-high heat; cook and stir the garlic in the oil until golden brown.

  2. Add the tomatoes and mix well. Stir in 1/2 of of your oregano.

  3. Once tomatoes have released some juices, place fresh cod on top and season with salt. Cover and simmer 3 minutes.
  4. Flip the cod and season again with salt and 1 tablespoon oregano; re-cover and cook another 3 minutes.

  5. Remove cover and stir in fresh spinach and lemon juice. Allow to cook until the juice evaporates slightly, stirring as needed for 2 to 3 minutes.
