- 1 large onion, chopped
- 1 celery stalk, chopped
- 2 leeks, chopped
- 4 garlic cloves, minced
- 2 cups lentils
- 2 cups chopped kale
- 1 large sweet potato, peeled and cubed
- 2 red potatoes, cubed
- 2 large carrots, chopped
- 1 15-ounce can chopped tomatoes
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon cumin
- 1 teaspoon onion power
- 1/8 teaspoon cinnamon
- salt and pepper
Here's how to make this dish:
- Heat olive oil in a large pot over medium heat.
- Add the onions, celery, and leeks and cook for about 4 to 5 minutes.
- Add the garlic and stir until fragrant.
- Add the remaining ingredients and bring to a boil.
- Once boiling, cover and switch to medium low heat for about 30-45 minutes..
