Ingredients:
  • 4 tablespoons extra virgin olive oil
  • 1 large onion, chopped
  • 1 celery stalk, chopped
  • 2 leeks, chopped
  • 4 garlic cloves, minced
  • 2 cups  lentils
  • 2 cups chopped kale
  • 1 large sweet potato, peeled and cubed
  • 2 red potatoes, cubed
  • 2 large carrots, chopped
  • 1 15-ounce can chopped tomatoes
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon cumin
  • 1 teaspoon onion power
  • 1/8 teaspoon cinnamon
  • salt and pepper
Here's how to make this dish:
  1. Heat olive oil in a large pot over medium heat.
  2. Add the onions, celery, and leeks and cook for about 4 to 5 minutes.
  3. Add the garlic and stir until fragrant.
  4. Add the remaining ingredients and bring to a boil.
  5. Once boiling, cover and switch to medium low heat for about 30-45 minutes..
