Ingredients:
- 4 lamb shoulder chops (about 3-4 pounds)
- 2 tablespoons coconut oil
- 3 onions, peeled and sliced
- 3 cloves of garlic, minced
- 4 carrots, cut into chunks
- 2 stalks celery, cut into chunks
- 4-6 sweet potatoes, cut into chunks
- 2 tbsp fresh thyme (or rosemary)
- 1 tbsp fresh parsley (or chives)
- 2 cups water
- Salt and pepper to taste
Here's how to make this dish:
- Heat 1 tablespoon of coconut oil in a skillet over high .
- Sear seasoned lamb chops, about 3 minutes each side. Remove from skillet
- Add onions and garlic to same skillet and saute until aromatic.
- In slow cooker, add the rest of the coconut oil, lamb chops, and onion garlic mixture.
- Cover with 1/2 cup water and cook on high for about 1 hour.
- Later, add chopped veggies, fresh herbs, and the rest of the water to slow cooker.
- Cook on high for another 5 hours or low for another 8 hours.
