  • 4 lamb shoulder chops (about 3-4 pounds)
  • 2 tablespoons coconut oil
  • 3 onions, peeled and sliced
  • 3 cloves of garlic, minced
  • 4 carrots, cut into chunks
  • 2 stalks celery, cut into chunks
  • 4-6 sweet potatoes, cut into chunks
  • 2 tbsp fresh thyme (or rosemary)
  • 1 tbsp fresh parsley (or chives)
  • 2 cups water
  • Salt and pepper to taste
Here's how to make this dish:
  1. Heat 1 tablespoon of coconut oil in a skillet over high .
  2. Sear seasoned lamb chops, about 3 minutes each side. Remove from skillet
  3. Add onions and garlic to same skillet and saute until aromatic.
  4. In slow cooker, add the rest of the coconut oil, lamb chops, and onion garlic mixture.
  5. Cover with 1/2 cup water and cook on high for about 1 hour.
  6. Later, add chopped veggies, fresh herbs, and the rest of the water to slow cooker.
  7. Cook on high for another 5 hours or low for another 8 hours.
