The reason salads are so great is because they are so quick and easy, but pack with nutritional flavor!

Here are some tips on how to make salads that really pack a punch!salad

  • Whisk together equal parts oil and vinegar (or lemon juice) and add spices like basil, garlic, mustard, oregano, paprika, tarragon, or thyme. Toss into any leftover pasta, add some fresh veggies and maybe some grated or cubed cheese and you’re good to go!

  • Fruit salads can be packed with flavor too! Blend together plain yogurt or cottage cheese a little bit of honey or maple syrup and sprinkle in some dessert friendly spice like cinnamon, nutmeg, allspice, clove, coriander, ginger, or poppy seed. Stir into a bowl of freshly chopped seasonal fruit and top with some chopped nuts or a bit of crystallized ginger.

  • Combine leftover cooked sweet potatoes with chopped hard boiled eggs with some cool, creamy dressing (like plain yogurt or mayo). Throw in a heap of spices like dill, garlic, mustard powder, parsley, cayenne, cajun seasoning, and salt & pepper.

  • What about your standard lettuce salad? Toss some of your favorite greens with nuts, cubed or grated cheese, dried fruits, sprouts, homemade croutons, sauteed tofu or tempeh, and your favorite dressing!
